Hi friends :) Here with a new, mouthwatering, satiating, extremely simple recipe that is also healthy and guilt-free.... #WINWIN
I recently went out for dinner at a new vegan restaurant in Toronto and being the sucker I am for yummy vegan desserts, I ordered the coconut lime pudding. Unfortunately, it was sweetened with maple syrup so my blood sugar did spike after eating it (still don't regret ordering it though cause it was ah-mazing). In light of this dessert experience, it prompted me to come up with my own recipe that tasted the same but didn't have a negative effect on my blood sugar level/mood.
This dessert is great for parties because it accommodates all types of diets without sacrificing taste, and it also has the added bonus of being great for your GUT (it includes coconut oil/avocado). I personally use stevia/swerve to sweeten it but I know some people have a problem with the aftertaste so if maple syrup/date syrup is your preferred method of sweetness, then just sub it out! Any-who enough rambling about sweet thangs -
here is the recipe !!
(Large single serving/small double serving)
1 tsp coconut oil
1 tsp lime juice
2 tbsp coconut cream (the thick stuff in the can)
1/2 tsp maca powder*
1 tbsp of swerve sweetener or stevia or however you like to sweeten things.
4 drops of vanilla extract
1/4 cup unsweetened nut milk
1 tbsp of ground nuts (I used pecans and it tasted great)
*maca is a super food that is hormone balancing and energizing/adds a caramel like taste, not integral to the recipe but a nice boost of nutrition.
Blend all the ingredients together EXCEPT for the nut milk and ground nuts! Add the nut milk in slowly until desire consistency is reached (you don't have to use the full 1/4 cup or you can use more if it's not enough). Use the ground nuts as the base, just put em in the bottom of your serving dish plain, or you can mix them with some coconut oil/sweetener before.
Stick em in the fridge and they'll get mousse-like when the coconut oil hardens.
