Easy Sugar-free Peppermint Chocolate (Vegan, Gluten Free, Soy free, All-Natural, Paleo, Keto)


Anyone who knows me knows that I love the holidays soooo much. Unfortunately, this time of year can bring out the worst part of being a type 1 diabetic. All the sweet treats and holiday parties can really take a toll on blood sugar levels and leave diabetics feeling totally burnt out.

This is why it is key to find healthy, lower carb alternatives for all the sugary things floating around. I'm not suggesting you don't indulge yourself at all, I'm just saying if you even made 1 substitute for a high carb dessert it would probably be much easier to carb count and much less stressful!

Being the chocolate fanatic I am, I decided I had to finally attempt making my own. I wanted to make the flavour festive for this time of year so I chose peppermint! Not gonna lie it took me a while to get the recipe right for this one, I went through many batches of yucky chocolate. Finally, after my 6th or 7th attempt I reached a place of perfection (at least for my taste buds). What's funny is the recipe is soooo simple!! I was definitely overthinking it at first and added wayyy too many things. The great thing about this recipe is you can add whatever you want and make it unique to fit your preferences, what's really important is the base of it but after that, go wild!

SO here it is! (Bonus - it only take 5-10 minutes)

Ingredients:

1/4 cup cocao butter

1/4 cup coacoa powder

1.5 tablespoons coconut oil

2 tablespoons swerve (powdered stevia)

(or monk fruit or coconut sugar)

1 teaspoon peppermint extract

DAS IT!

Instructions:

In a double boiler melt only the cocoa butter. Only once fully melted add cocoa powder. Stir cocoa powder until fully dissolved. Next add sweetener of choice, coconut oil and peppermint extract and keep stirring until it's smoooooth in consistency (we don't want any clumps). Once the texture is silky smooth transfer mixture to molds with a spoon or pour it directly, I used a candy cane mold but you can also use an ice cube tray! Put mold in fridge for 1 hour until hardened, (if you want to add coconut or puffed quinoa (shown in pic above) or anything else, add them 10 minutes into fridge time). Once hardened just pop em out and you got yourself a sweet sumptuous holiday treat!

This chocolate makes great gifts too! You can sub the flavours and textures to your recipients wants and needs to make it much more personal and unique.
