Good-For-Your-Gut Chickpea Cookie Dough Fudge Recipe (Vegan, Gluten-free, Low carb, Soy-free, Peanut-free)

 

Back with another recipe! This time its for decadent cookie dough fudge. As I always say, it's great idea to find healthy alternatives for usually super sugary foods instead of completely depriving yourself.  Because I also am a firm believer that gut health affects overall health, I think its important to include as many pro and pre biotics in your diet as possible! If you aren't sure what a prebiotic is, it's the food of probiotic - so its important to get them in your daily diet. In this recipe, I used yacon syrup to sweeten it, which is a prebiotic! It's not zero sugar but its lower than regular sugar and its very nutritious!  This recipe also contains lots of fibre (from the chickpeas, yes chickpeas) which is also good for your gut. If you're feeling like you want something sweet and satisfying but don't want to sacrifice your health for it, this is a great recipe for you!

Also you fully CANNOT tell there's chickpeas in this!! I taste tested it on some of my friends and they all thought it was peanut butter!

 

 

Ingredients:

1/4 cup sunflower butter

1/2 cup peeled, soaked chickpeas

1 tablespoon melted coconut butter

2 tablespoons yacon syrup

pinch of sea salt

3-4 tablespoons of hot water

1/4 cup of melted dark chocolate of your choice.

 

Method:

 

Blend all ingredients except melted chocolate in blender of food processor. Blend until smooth. Take mixture and spread it on a flat parchment paper to desired thickness. Once satisfied, drizzle melted chocolate on it, then place in freezer for 2 hours, and thats it.

Cut into pieces of your desired size and serve! <3
